Gluten-Free Oatmeal Pancakes

INTRO

I hate making pancakes because I’m not good at flipping them.  But I figured that I can’t really be a proper B&B and not have pancakes on the menu, so I try and discourage people from ordering them by saying they are gluten-free (some people erroneously think this means tasteless, lol).  But people keep ordering them and giving me lots of compliments and asking for the recipe.  So here it is.

This recipe makes enough for 2 people (6 pancakes). I cook these on the big burner of the stove in a flat pan (easier for flipping), My cooktop goes from low (#1) to high (#9) and I cook these at #2. Or sometimes I use an electric griddle set at about 275F. 4 mins per side

 

INGREDIENTS

  • 1/2 cup (120g) unsweetened applesauce
  • 1/2 cup (120g) non-dairy milk (works with dairy milk too, but not vegan then)
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1 1/4 cup (150g) oat flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/8 tsp salt (optional)

INSTRUCTIONS

  1. I mix the milk and lemon juice together and let it sit for a minute or so, but this isn’t really necessary.
  2. Whisk together the applesauce, non-dairy milk & lemon juice, and vanilla.
  3. Add the dry ingredients. Stir to combine (don’t over mix just until all the lumps are gone).
  4. Heat a non-stick skillet over low heat.
  5. Scoop about 2 heaping tablespoons per pancake into the pre-heated pan.
  6. Cook for 4 minutes or until the edges are starting to brown. Flip. Cook another 4 minutes.

MAPLE SYRUP

I’ve learned a lot about maple syrup-making since moving to the area where almost every second farm has some kind of production.  The one I serve most often, because to me it has the most maple flavour, is small batch made by my neighbour down the road (not available commercially).  But my other two favourite go-to maple syrups are Little Mactaquac Maples and Dumfries Maples.  Both are available many places in and around Fredericton, NB, Canada, and you can order Dumfries Maples online.
